Why are the "HW matching numbers" so important when mapping

Hi all,
I am starting to learn about ECU mapping and there is something that i see everyone talking about but couldn't figure out why it is so important.
Why does the tuner needs the Original map from the car and cannot use a stock map from the same engine model found on the web?
I heard about hardware numbers but i don't really understand what does that stands for.
I personally extracted the stock map on my golf4 PD150 and compared it to a stock PD150 map from the web and i couldn't see any values difference between both maps in VAG EDCSuite.
So my questions are what are those Hardware numbers? Where can i find them in my map? Why are they so important to tune a map knowing that the vales on stock maps for the same engine are always the same (might be wrong on that) ?
Any help would be much appreciated. I'm going to remap my daily very soon and i want to make sure that i did it the right way! Thanks for your time!

HW numbers effects the map locations, not always in the same location on each HW/SW version

Because it can be different board design, pinout, actuators and software version.
Yes you can find info in your flash and eeprom with simple hex editor.
