Hi, can the DPF be removed in the ECU map prior to an exhaust modification on a VW Toureg (EDC17 CP14)?

Must be done in the same time. If you remove the DPF in the software but you live it on the car, the ECU will have no information about it and that can cause a lot of problems. The DPF can be blocked and can cause engine damage.
