When I first started mapping it was on Evo's and subarus using openport tuning but when I changed to using winols it was a totally different ball game. The hardest part is finding the maps and axis data but after staring at hex files for so long the numbers start jumping out at u. I find when searching in 2D I find a section I think could be a map, I mark the start and then look at the hexdump to see if I can see the axis data ie 00016 - 000012 then that lets you know there could possibly be a 16x12 map but I then look at the data in front of the numbers above to see if they make sense then go from there. its a lot a trial and error to start with but after a while it does get easier.
